We were able to get in a great morning walk today, for a distance of 3.47 miles and we walked well over an hour. Several times while walking we have seen and said hello to a couple who ride their bicycles. Today they stopped and asked us if we were from Kansas and once we told them yes, where from? They too are from Kansas and live in Andover - not too far from our boys in Wichita. We had a nice visit with them and went on our way.
Once we returned to Bentley, we had breakfast, took our showers and I managed to straighten things in Bentley before we left. Gary will be picking us up for church about 10:35 or so. Today there was only four of us riding on the church van. Evelyn and Ray are also from Kansas - near Benton, also not too far from Wichita.
I've mentioned before how much I enjoy listening to the Pastor of this church. Today was no exception. He brings a straightforward, to the point message and keeps the service to approximately an hour. With two services back to back (Spanish and English) I'm sure that is important. I really love the music, and many of the songs I've heard on K-Love which is a plus. I asked Gary today how long he had been coming to this church, and how he happened to choose it. He said it had been almost 15 years that he has attended. In response to how he chose it, he was riding down the road one day, saw it, and decided to give it a try. I also thanked him again for inviting us to attend, as we would have no idea where to begin looking. Before we left Oswego I was concerned about what we would do for church, and I believe God just worked this out perfectly for us. He knows our needs! During the service, the Pastor (I cannot remember his name - it's quite unusual) mentioned something about talking to kids at school, so I asked Gary if the pastor had a job outside of church. He told us he is a principal at the La Joya School District, just a few miles down the road. What a wonderful role model he must be for the students there.
Afterwards, it was lunch at Dairy Queen! Dean and I shared a 6 piece steak finger dinner. We didn't want to eat too much knowing there would be a lot of food at the party later this evening. I had not noticed the paper they use in the baskets to serve our food until today, so I had to take a picture of it.

They even use the logo that DQ is Texas' Stop Sign! |
I had quite a few eggs, so I decided I'd make some deviled eggs as well. Whether they are all eaten or not is okay, since it is one of Dean's very favorite foods. He'll be happy if we bring some home.
I love making my hard boiled eggs in the Instapot and if you do not have one, you should consider it. The eggs come out perfect every time and I've never had one problem peeling them whether they are new eggs or I've had them for a little while. You know how the shell sticks to the egg and tears it up - does not happen if you use the Instapot.
Our friend Carolyn M. makes these wonderful "loaded deviled eggs" and Dean loves them. I didn't have everything I used the last time I made them, but I did add the normal mayo and mustard, plus sweet relish, grated cheddar cheese, bacon bits and garlic powder. I should have added just a bit more mayo, since they were a tad bit dry, but the flavor was great.
Next was the topping for the cheesecake - a wonderful brown sugar/pecan topping. Oh my, it was delicious. About 4:00 I put the artichoke/spinach dip in the convection oven to bake. Once everything was done, we loaded up and headed next door. I wasn't much interested in the football game - so I visited quite a bit with Peggy, who I was sitting next to, about a variety of things. She is such a nice lady - like all of our RVing friends, and very easy and interesting to talk to.
The sunset was gorgeous this evening.

The pictures do not do it justice! |
I need to hang a sign on my refrigerator - BE SURE TO TAKE PICTURES OF THE FOOD BEFORE YOU BEGIN EATING IT! Lol! I like to include pictures in the blog and get irritated with myself when I forget to take some to include here in the blog - no matter what the subject is.
The food was delicious and of course I ate more than I should. The last quarter of the ballgame I did begin to pay a bit of attention to the game as the score tightened. I had no interest in either team, since our Kansas City Chiefs were not part of the event. However, without the Chiefs involvement, I have a tendency to root for the underdog and as the game grew closer to an ending, I became more excited about the Eagles winning. What an ending it turned out to be.
Once the game was over, everyone loaded up their dishes and we all headed home.
